
LUNCH MENU
Our lunch is served off of the truck and includes a buffet set up of assorted salads, ice cream, cookies, brownies and drinks. The following are only sample menus to show the range of cuisine available. Once provided with a chef for your crew, you will work with them to create your menu. We can accommodate any special needs and requests.

sliced over citrus zested rice, topped with chimichurri, and served alongside garlic green beans
Secco de Pollo
thighs marinated in herbs, spice, and dried fruit, laid over roasted yam, onion and tomato stacks, alongside broiled thyme littleneck squash
Shrimp al Ajillo
garlic and arbol chili sautéed shrimp over spaghetti squash nests with lemon asparagus
Vegan
Raw Zucchini Linguinie
topped with kale, saffron white beans, queso coconut reduction and toasted sage

served over brown rice, blistered tomato and artichoke salad, balsamic reduction

over creamy mashed potatoes, alongside oven roasted brussel sprouts with caramelized onions

served with oven roasted sweet potatoes and grilled asparagus
Seared Ahi Tuna Steak
served atop a steamed mixed grain pilaf, alongside a vegetable medley of squash and zucchini

seared and served with a sweet red pepper sauce and your choice of vegetable sides

atop roasted butternut squash, faro and golden raisins, alongside an apple slaw
Mimosa Chicken Salad
grilled chicken breast sliced over arugula, tomatoes, shallots, batonette beats and carrots and topped with a champagne citrus vinaigrette
Dry BBQ Rubbed Salmon
laid over coconut rice, alongside charbroiled cauliflower and topped with grilled serrano and pineapple puree

Buffalo Cauliflower
marinated cauliflower florets flash fried and served with ranch seasoned hummus and your choice of sides
